crazy easy vegan chili

1 sweet onion
5 cloves garlic
2-3c water (or low sodium veggie broth)
5 carrots chopped
1 bunch celery chopped
1 28oz can diced tomatoes
1 6oz can tomato paste
6c beans (or 3 cans)
2 tbsp chili powder
1.5 tbsp cumin
1 tbsp oregano
1 tbsp hot sauce (or more)
2 tbsp finely chopped pickled jalapeños
2tbsp coconut sugar
3-5 c cooked brown rice (optional)
1/2 tsp salt (optional)

 

Sautee chopped onions and minced garlic in a couple tablespoons water until soft.  Add celery and carrots with more water and simmer until slightly soft.  Add all other ingredients (except rice) and cook on low heat until ready to eat.  Cook rice separately and add at meal time if desired.

 

Suggestions: If you’re feeding picky eaters, celery and/or carrots can be omitted.  Substituting the celery or carrots with bell peppers is yummy, too.
